With the recent news about Coronavirus (COVID-19), we have fielded several questions about the virus and swimming pools/hot tubs. Following is a statement from the CDC (Centers for Disease Control):According to the CDC, there is no evidence that COVID-19 can be spread to humans through the use of pools and hot tubs. Proper operation, maintenance, and disinfection (e.g., with chlorine and bromine) of pools and hot tubs should remove or inactivate the virus that causes COVID-19.

Pool Party Food-Mango Muffins

Mmmm mmm Good!!  These Mango Muffins did not last but 2 days (and that’s because I made myself hold out for Robert to get home so he could try some!)

These would be a great late summer…almost fall!…pool side snack!

I got this recipe from grocerybudget101.  I have had so many mangoes lately and they are going out of season and are a great price anywhere you go!

Instead of greek mango yogurt I used low fat vanilla yogurt.  I also did not have quite a cup of yogurt but then I just used 2 cups of oats (which is all I had on hand anyways!)  I also used my food processor instead of a blender and it worked perfectly (I also love my food processor so I would not have used a blender anyways ;))

Here’s the yummy in my tummy recipe!

You’ll Need:

  • Preheat the oven to 400F
  • 2 1/2 cups Old Fashioned Oats (not quick cooking Or Steel Cut)
  • 1 c. Mango Flavored Greek Yogurt (with fruit on the bottom)
  • 2 Eggs
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/3 c. Sugar or Quality Baking Stevia (or the sweetener equivalent of 1/2 Cup of Sugar)
  • 1 1/2 c. Fresh diced Mango (not frozen)

In a blender add half of the oats and puree until it’s very well blended. Add the remaining oats and process again until the oats are finely blended.

Be sure that the oats are completely processed and smooth before continuing, or your muffins will taste more like gloppy oatmeal. Add the yogurt and eggs, baking powder, baking soda, cinnamon stevia (or sweetener of your choice), and blend until the oats are smooth and all the ingredients are well mixed into a smooth batter.

Pour the batter into a bowl and gently fold in the diced mango. Spoon the batter into foil or silicone muffin tin liners. Bake for 16-18 minutes, until the tops are lightly browned and a toothpick comes out clean when inserted.

Grocery Budget 101’s Tips, Tricks and Other Ideas:

  • If you want an even lower calorie version, use 3 egg WHITES in place of the 2 eggs.
  • Do NOT use Quick Oats- they won’t work. Do NOT use Steel Cut Oats, they also do not work.
